Broccoli Katsu Curry

With this vegan recipe, from Fearne Cotton's 'Happy Vegan' recipe book, you'll never feel left out at Wagamama's again. Packed full of flavour and vitamins, why not try something different for your dinner tonight?
Ingredients:
3 tbsp olive oil
1 onion finely chopped
2 carrots cut into 1cm pieces
3 garlic cloves crushed
3 cm piece of fresh ginger peeled and grated
1 tbsp mild curry powder
1 tsp garam masala
1/2 tsp ground turmeric
1 tbsp white spelt flour
400 ml vegetable stock
2 tbsp soy sauce
350 g Tenderstem broccoli
100 g fresh breadcrumbs
3 spring onions finely chopped
Sea salt and freshly ground black pepper to taste
Brown rice to serve
